Can you use a herd of bison as cover in 'Red Dead Redemption 2' on Rockstar Games during a gunfight?

RDR2’s combat needs wild cover, and a bison herd fits. Are the bison near the Great Plains? Does hiding behind them shield Arthur from bullets, and spooking the herd makes them charge at enemies, knocking them down?
