Can you use a herd of sheep to block a stagecoach in 'Red Dead Redemption 2' on Rockstar Games?

RDR2’s heists need rural roadblocks, and a sheep herd stagecoach block fits. Is the herd tended by a farmer near Valentine? Does it let Arthur drive the sheep onto the stagecoach route, slowing it down so the gang can rob it without a chase?
